Sibirian Kale (cut or sheared cabbage) is an ancient crop with feathery leaves and magenta stems. Its decorative appearance is matched by a fine, nutty flavour. Its leaves and stems can be used in a variety of ways: as baby leaves for salads or as a cooked vegetable at various stages of ripeness.
